Observation: 3 compartment sink is clogged, slowly draining and overflowing into the sanitizing sink during the inspection.
Risk of drain backing up sewage into sink and contaminating dishes.

Corrective Action(s): Call plumber and have sink scoped and fixed.
Ensure de-clogging is part of the Cleaning Plan and routine maintenance.

Observation: Two floor drains overflooded with sewage (one in the hall and one in the back underneath the hand sink) during the inspection as the 3-compartment sink was being drained.
Corrective Action(s): Mop up and sanitize floors.
Sanitize mops.
Does not appear to affect the rest of the kitchen or the washrooms. All food items are above the floor and on racks and does not affect food.
Monitor the situation to ensure that kitchen, food prep areas and food items are not effected.
Warn staff to avoid affected areas to prevent slips and falls.
Call plumber to scope drains and ensure clogs do not occur.

o Hand wash stations are fully supplied with liquid soap and paper towels in dispensers
o Operators had clean clothing for food preparation
o Staff washrooms appear clean and are fully supplied for hand hygiene
o Public washrooms are clean and fully supplied for hand hygiene

Storage Temperatures
o Cold holding Coolers are below 4C
o Cold holding Freezers are below -18C
o Hot holding food items are at 60C

Food Processing and Food Protection
o Cooking - Temperatures are being monitored

Facility has called plumber to fix the sinks and floor drains.

Monitor the situation to ensure it does not worsen or occur again.
Facility closure may be required if sewage is backing up into food preparation areas.
