Observation (CORRECTED DURING INSPECTION): Potentially hazardous foods stored in walk-in cooler overnght ranged from 8C to 12C. Verified with probe thermometer

Corrective Action(s): All perishable food items that were above 4C were discarded. Including prepackaged sliced deli meats, shredded cheese, shredded lettuce, and any opened packages of sauce.

Observation: Walk-in cooler not in working order. Air temperature measured 10.4C, temperature display continued to display 51F from the previous day, indicating that the unit requires service immediately.

> Temperature log was not completed for April 6 routine inspection.
> Upon follow-up, the recording for both April 6 and April 7 indicated the walk-in cooler temperature was 39F - which is inaccurate; as the ambient temperature recorded on the April 6 routine inspection was 51F. The last accurate temperature reading therefore can not be determined.
Corrective Action(s): Service walk-in cooler immediately so that temperature can be maintained at 4C or colder at all times.
