Routine Inspection
- Hand washing stations are provided with hot/cold running water, liquid soap and paper towels in dispenser.
- All cooling units are at or below 4C
- Freezers are at or below -18 C. Temperature log maintained via digital application
- Hot holding unit is at or above 60C
- Sanitizer chlorine measured at 200 ppm. Wiping cloths are stored in sanitizer. Ensure to provide small sanitizer containers for different section of the kitchen.
- General sanitation is satisfactory. Floors are clean and free of food debris and grease. Please ensure frequent cleaning and sanitation on surfaces above the food preparation area. Wipe down back splashes and stainless steel surfaces so that they are free of excessive oil splashes and fingerprints.
- Mop sink is maintained.
- Ice machine is clean and ice scoop stored outside in a sanitary manner.
- No obvious sign of pest at this date.
- Food stored above the floor.
- Food internal temperature is monitored and recorded via application..
