Observation: Dishwasher final rinse tested at approx 20ppm chlorine. Hoses going into the chlorine container and rince aid container were switched. Once hoses were switched back and the dishwasher primed, a final rinse concentration of approx 70ppm chlorine was detected.
Corrective Action(s): Rewash all utensils.
Affix a label to all 3 hoses(Detergent, Rinse aid, Sanitizer) so prevent this from happening again.
Record and document daily in your monitoring log to show you are doing your due diligence.

Observation: Current test strips for the glasswasher are difficult for the staff to see a color change
Corrective Action(s): Replace with the original test kit that was used in Sept 2022. Those strips change from yellow to green which is easier to see to confirm the concentation of iodine is correct.

Observation: Hot water faucet at 2 compartment sink not repaired. This is an outstanding item listed in report on Sept 23, 2022 and on March 10, 2023.
Latch on the sandwich cooler is missing resulting in the door not closing tightly.
Corrective Action(s): Repair hot water faucet at the 2 compartment sink
Replace missing latch

Grease diffusers in exhaust canopy cleaned.
Winco hot holding unit water bath tested at 75c when set to maximum.
Staff replaced burned out bulbs in ceiling fixture at time of inspection.
***Monitoring logs started but incomplete as the log is missing 1) Dishwasher data, 2) Glasswasher data and 3) Hot holding data. Documentation is important as this demonstrates that the premises has been doing its due diligence, especially in the event of a food borne illness complaint..
