Observation: Ceiling tiles and light covers in kitchen in need of cleaning above cooking area.
Front end sanitizer measured 150 PPM Quat residual.
Corrective Action(s): Thoroughly celan and maintain this area.
Sanitizer was replaced during inspection and now measured 200 PPM quat. Ensure that it is monitored and changed more frequently.

Handsinks had liquid soap and paper towel in dispensers adjacent to them.
Warmers were maintaining foods at 60 degrees C. or hotter.
Walk in cooler and fridges were maintaining foods at 4 degrees C. or colder.
Walk in freezer and upright freezer were -18 degrees C. or colder.D
Walk in coolers were very well organized.
Dishwasher final rinse reached 73 degrees C. at the plate surface during final rinse.
