Routine inspection conducted:

- Walk in cooler at 3 degrees C
- Prep cooler at 4 degrees C (above) and 2 degrees C (below)
- Under counter cooler at 3 degrees C
- Two chest freezers (kitchen) at -18 to -19 degrees C
- Large chest freezer (basement) at -28 degrees C
- Small chest freezer (basement) at -18 degrees C
- No hot holding at time of inspection (dinner only)
- Thermometers available for all cooler units. Temperature records maintained.
- Food is covered and well organized
- Hand washing stations are unobstructed and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
- Low temperature dishwasher measured 57 degrees C and 50 ppm chlorine in rinse residual.
- Bleach water sanitizer available in spray bottles (front, kitchen). Note: Bleach water in kitchen spray bottle measured over 200 ppm chlorine--diluted to 100 ppm chlorine at time of inspection. Please label bottle. Front bottle is labeled and measured at 200 ppm chlorine.
- Ice machine and ice bin in sanitary condition. Scoops stored safely.
- Deli slicer maintained in sanitary condition. Discussed cleaning and sanitizing procedures for deli slicer with owner--satisfactory.
- Ventilation hood canopy maintained in clean condition
- Food storage (basement) is well organized--food is stored off the floor
- No evidence of pest activity noted
- FOODSAFE requirements met at time of inspection
- Washrooms are clean and well maintained
*Note: In use utensils are stored in a hot water bath (greater than 60 degrees C) in a cleaned food can on the flat top grill. Please ensure utensils are kept in a food grade container that is designed for heating and reuse (e.g. hot holding unit, metal food insert). Corrected during inspection.
