Observation (CORRECTED DURING INSPECTION): 1.5 trays of eggs were being stored at room temperature at the time of the inspection. Temperature was 24C
Corrective Action(s): Cold potentially hazardous foods must be stored at 4C or colder if they are not maintained at this temperature, they must be discarded after 2 hours.

Observation (CORRECTED DURING INSPECTION): Soap and paper towel dispenser were empty at the main kitchen handwashing sink
Corrective Action(s): Ensure handwashing stations are always stocked with liquid soap and paper towel.

304 - Premises not free of pests [s. 26(a)]
Observation: Mouse droppings noted throughout the dry storage area as well as along the shelving in the front service area and in between equipment. Dead mouse present in trap.
Corrective Action(s): Clean up all droppings and santize/disinfect areas with bleach solution.
Take measures to ensure premises is free of pests. Currently, traps are in place, but sanitation level needs to improve and opportunities for runways and harbourage need to be removed. Contact a pest control company to provide service.

Observation: Back doors in premises were noted open at the time of the inspection. No screens were present. This can allow pests to enter.
Shelving in front service area is cluttered and numerous (non-food) items were stored on the floor in the dry storage area creating runways or harbourage areas for rodents.
Corrective Action(s): Keep back door closed at all times or install screens to prevent pest entry. Seal any holes in walls.
Organize shelving and remove any items not needed for the food premises. Ensure floors are kept clear to prevent runways/harbourage areas.

Observation: Food debris and dirt were noted throughout the kitchen and service area. Food debris noted in sliding glass door cooler.
Corrective Action(s): Thoroughly clean the following areas to remove dirt and debris:
-floor under deep fryers
-floor under dry storage shelving
-handwashing sink
-between upright cooler and counter in service area.
Clean interior of sliding door cooler.

Observation: 1)Dishwasher not functioning. It would not start. Operator reported that repair person was in today to determine what the issue is and will be replacing a part. Dishes are currently being manually sanitized.
2) Upright sliding door cooler was not working and not is use at the time of the inspection.
Corrective Action(s): 1)Repair the dishwasher so that it is in good working order and capable of effectively washing and santizing the dishes. Correction date: June 24/16
2)Repair upright cooler so that it is able to maintain a temperature of 4C or colder.

Bleach sanitizer (200ppm Chlorine) was present in a spray bottle for sanitizing food contact surfaces and wiping tables
Liquid soap and paper towel were present at the back prep area handwashing station and front service area. .
Quats sanitizer (200ppm) available from the dispenser in the dishwashing sink. Currently being used to manually sanitize dishes.
