Observation: Food items (pepper flakes etc) stored above paper towel dispenser. Ensure hand sink area is free of food items to prevent cross contamination of food. Also reorganize storage shelf so food items and food equipment are stored separately to prevent cross contamination issues.

Observation: There was a build up of debris and grime along the perimeter of baseboards, behind shelving, on the cover of the compressor in the walk in cooler and underneath food equipment. Ensure all areas of the kitchen and storage area regularly cleaned and sanitized to maintain sanitary condition.

Note: ensure hand sink area free of food items to prevent cross contamination of food.
All cooling units were 4 C / 40 F or colder
Freezer unit was -18 C/0 F or colder
All food items were covered in storage areas
Sanitizer (quaternary ammonium) was at 200 ppm in spray bottles used to sanitize food contact surfaces
Monitoring records (temperature and sanitation) were available and up to date.
Recommendation: ensure all staff have adequate hair protection.
