Observation (CORRECTED DURING INSPECTION):
Container of bean sprouts, cut limes and jalapenos were being stored on the countertop in the waitress area. They were 14C. Perishable foods (especially the bean sprouts) must be stored in the fridge (4C) at all times to prevent growth of germs.
Corrective Action(s):
Immediately relocate these foods into a cooler and inform all staff the foods must stay in the fridge at all times and only removed when ordered.
During the inspection, the owner relocated the foods into a cooler and informed staff.

Observation:
Grease and food was accumulating on the side of the deep fryer between the gas range; on the side of the flat grill by the soup pot burners; and the exhaust hood requires to be professionally cleaned (as per the sticker). Accumulation of grease and food will attract pests.
Corrective Action(s):
Clean and wash the mentioned areas to remove the grease and food accumulation. Call a professional company to clean the exhaust canopy.
The owner informed me that a professional company has been hired and arriving in a couple weeks to clean the exhaust canopy.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers 4C or colder; freezers were -12C or colder; hot holding units were above 60C; thermometers present; and no temp. recorded.
- Low temperature dishwasher had [Cl2] between 50-100ppm.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Food storage practices done correctly. All foods stored in covered container; raw proteins stored separately or below RTE foods; 6" off the floor on shelves; and no expired foods in use.
- FoodSafe certified staff present.
- General sanitation level is good. Improvement needed only in the mentioned areas.
- No signs of pests.
- All surfaces and equipment are in good working order.
