Observation: Ice machine has a significant build up of biofilm around water recirculation area. Ice scoop and sieve stored in a separate bucket (good practice) however water has accumulated at the bottom of the bucket and mould has started to grow.
Corrective Action(s): Dismantle recirculation area and thoroughly clean and sanitize. Clean and sanitize ice scoop, sieve and storage bucket, wash these at least daily and allow to properly dry. Due: Nov 25, 2022.

Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: Rubber seal around potato peeler machine's chute has completely disintegrated and is falling apart. Gap between chute and main body of unit has biofilm build-up. Few small flies also observed coming out of unit
Correction: Disconnect chute from main body of unit (if possible) and remove all remnants of the seal and any other debris/biofilm. Thoroughly clean and disinfect unit. Due: today.

Note: Build up of food and grease starting to buildup under deep fryers and will require deep cleaning very soon.
General observations:
√ Coolers ≤4°C, Freezers ≤ -18°C
√ Food up off floor ≥6”, good stock rotation noted
√ Freezer floor has been replaced and is easily cleanable
√ Hand wash stations fully stocked with hot and cold running water, liquid soap and paper towel
√ Bleach sanitizer available at 100ppm
√ High temperature dishwasher sanitizing at ≥71°C
√ Equipment appeared to be in good working order
√ General sanitation and maintenance is satisfactory
