Observation (CORRECTED DURING INSPECTION): 1. Leftover meat from the previous day (ground beef, beef chunks) were at a temperature of 12C at time of inspection. Raw oysters at approximately 12C.
2. Scallops, lobsters, beef prepared the day of, approximately 2 hours ago, were at 12C.
Corrective Action(s): 1. Meat and raw oysters discarded at time of inspection.
2. Items prepared the day-of were transferred into the glass-door cooler maintaining at 2C. Always check temperatures throughout the day to ensure that your coolers are working at 4C or less to avoid temperature abuse.

Observation (CORRECTED DURING INSPECTION): Soup hot-held at 55C.
Corrective Action(s): Hot-holder turned up at time of inspection and measured 60C. Always keep soups and hot-held food products at 60C or above to prevent growth of harmful bacteria and/or production of their toxins.

Observation (CORRECTED DURING INSPECTION): 1. Eco-Lab(TM) chemical container used to store fish stock. This is a REPEAT VIOLATION.
2. Ice wand was wrapped inside a garbage bag.
Corrective Action(s): 1. Chemical container removed at time of inspection. DO NOT USE chemical containers to store any foods - chemicals could still leach from these containers.
2. Ice wands are food contact surfaces. Always use a food-grade bag to store ice wands.

Observation (CORRECTED DURING INSPECTION): Old creme brulee / butter containers, currently not in use, were in poor sanitary condition under the center counter in the kitchen.
Corrective Action(s): Containers were cleaned and sanitized at time of inspection. Always keep food contact surfaces in good sanitary condition, even if they are not regularly in use. Keep your kitchen in good sanitary condition - grease and grime are major attractants for pests such as rodents.

Observation: 4-door cooler was measured at an ambient temperature of 13C.
Corrective Action(s): Repair or adjust the cooler so that it maintains a temperature of 4C or less. Do not use the cooler until a follow-up inspection has been conducted to verify that it can reach 4C or less.

Routine inspection conducted. The following observations were made:

1. Temperatures
- 4-door cooler at 12C* (see violation code above)
- Glass-door cooler at 2C
- Basement walk-in cooler at 2C
- Wine cooler at 3C
- Walk-in freezer and chest freezers at -18C or below
- Hot-held inserts at approximately 55C (corrected to 60C at time of inspection)
- NOTE: Please maintain temperature logs on a DAILY BASIS

2. Hygiene and Sanitizing
- Hand wash sink stocked with hot/cold running water, liquid soap, and single-use paper towels
- Low-temperature dishwasher releases 100 ppm chlorine residual at final rinse cycle, at the plate
- Sanitizing pail contains approximately 200 ppm chlorine residual

3. Storage
- Food products kept at least 6" off the floor
- Downstairs basement is more organized compared to the previous routine inspection

4. Pest Control
- Professional pest control company conducts routine audits (last inspection did not reveal any signs of rodent activity; invoice date: July 20, 2019)
- No recent, visible signs of pest activity observed at time of inspection
- Mechanical rodent traps did not contain any trapped rodents
