Discussed Food Safety Plan re: Chicken Breading station. Plan from chicken franchise states you must discard water after a certain volume of chicken, or after rush periods. Please discard water after lunch time and make up a new water for the afternoon if chicken is being cooked - do not save water for the next day. Breading must be discarded at the end of the day as per food safety plan.

PLEASE PROVIDE FOOD SAFETY PLAN ON SITE.

Hot holding unit has improved - air temperature is at 50C, but must be at least 60C. Repair hot holding unit so that food is being maintained at 60C. Until then, you must discard food that has been held less than 60C for greater than 2 hours.
