Observation:
- Dust build up observed on the pipes higher up in the wall in the dishwasher area
- Debris observed behind cook lines
- Debris observed underneath shelving racks at the back. Shelving racks themselves observed with dust build up.
- Food debris observed underneath rubber mats for counter shelves.
- Rodent droppings observed along the edges of wall in the back loading area and washroom (unused)
- Dried up food debris/stains observed on the base of the drink cooler.
Corrective Action(s):
- Clean all the areas noted above.
- Clean and sanitize the rubber mats.

- All handsinks are fully equipped.
- All coolers at 4C or below.
- All freezers at -10C to -18C.
- Bleach sanitizers available in spray bottles and in buckets measured at 100-200ppm with test strips.
- High temperature dishwasher reached 71C or above during the final rinse.
- Hot held miso soup & rice at 60C or above.
- Ice machine in sanitary condition.
- Monthly pest control by ORKIN. No rodent activity reported by the company as per the manager.

*Replace old sandwich cooler inserts to new ones - this has been mentioned in the previous inspection report.
*Ensure all the areas noted in the violation section are cleaned routinely.
