Front servery fridges and protein cooler have been serviced. All fridges are currently 4 degrees C or colder but protein fridge has major ice build up on it. Repairman has been called to adjust defrost on this fridge. Quat sanitizer was changed during inspection and found to have 0 PPM quat residual. This was corrected during inspection and now buckets contain 200 PPM quat residual. Operator to bring in service company to address.as this is an ongoing issue.
