Observation (CORRECTED DURING INSPECTION): 1. Buckets with wiping rags to be 0 - 50 ppm.
2. Found bowls around kitchen to be repeatedly used until between rushes, over 4 hours.
Corrective Action(s): 1. Must ensure wiping rags are stored in 200 ppm quat, supply bottle changed at mop sink as it was empty. Change all spray bottles and buckets.
2. All equipment and food contact surfaces must be washed and sanitized after each use or every 4 hours. Increase frequency of washing and sanitizing of mixing bowls.

Observation: Wall covering behind sink at servery is loose allowing for potential pests harborage and food accumulation. Cupboard under the sink had a large hole into the wall and the bottom is heavily damaged.
Corrective Action(s): Repair wall covering so it is firmly secured to the wall, and repair the cupboard below so it is in good condition, easily cleanable and prevents potential area for pests to hide.

- Temperatures were being monitored
- Hand sinks had liquid soap, paper towel
- Dishwasher had final rinse of 100 ppm chlorine
- Glass washer had a final rinse of 12. 5 ppm iodine
- No signs of pest activity noted during inspection
- General sanitation is satisfactory, just a reminder to ensure to include all hard to reach areas under equipment and shelving.
