Observation (CORRECTED DURING INSPECTION): Container of mashed potatoes made the previous night was probed at 8C. Container was cooled with plastic wrap over the entire container.
Corrective Action(s): Hot potentially hazardous foods must be cooled from 60C to 20C in 2 hours or less and from 20C to 4C in 4 hours or less. Cool foods in shallow containers and allow steam to escape. Mashed potatoes were discarded at the time of inspection.

Observation (CORRECTED DURING INSPECTION): Disposable foam cup was placed in the baking powder as a scoop.
Corrective Action(s): Ensure all scoops are stored in a sanitary manner. Do not store scoops directly inside ingredients. Scoop was removed at the time of inspection.

Observation: Drain flies were observed on the walls by the mixer and mop area in the kitchen
Corrective Action(s): Ensure facility is maintained in a clean and sanitary condition and walls are cleaned and sanitized on a regular basis to prevent attraction of pests.

Observation: Refrigeration unit on the third floor serving kitchen was at 7C.
Corrective Action(s): Adjust or service cooler unit and ensure it can maintain 4C at all times.

Observation: Both thermometers in the third floor serving kitchen were broken.
Corrective Action(s): Ensure all cold holding units are equipped with accurate thermometers to verify proper cold holding temperatures.

Comments

-Facility has one main kitchen and three serving kitchens. Food is prepared in the main kitchen and transported to the serving kitchens.

Main Kitchen:
-Walk-in cooler was at 4C.
-Walk-in freezer was at -16C.
-Hot holding units are turned on and warmed up prior to using for storage of foods.
-High temperature dishwasher had a final rinse temperature of 72C on the dish surface (minimum 71C required for proper sanitizing).
-Handwash station easily accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Quats sanitizing dispensers both tested at 200ppm.
-Sanitizer spray bottles properly labelled and tested at 200ppm.
-Deli slicer was found to be clean and sanitary. Slicer is properly disassembled for cleaning and sanitizing.
-Ice machined was clean and well maintained.
-General sanitation satisfactory. Ensure staff clean under the walk-in cooler shelving units.
-Facility is serviced by a professional pest control operator on a monthly basis. No signs of rodents noted at the time of inspection.

Serving Kitchens:
-Hot holding units were turned on in preparation of food delivery from the main kitchen.
-Serving Kitchens on the first and second floor refrigerator units were at 4C. Accurate thermometers present.
-Handwash station easily accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Quats sanitizer spray bottles labelled and tested at 200ppm.
-General sanitation satisfactory. The space between the refrigerator and table require attention.
*Temperature records are not being completed properly. For all of August, the afternoon temperature exceeded the critical limit of 4C and no correction actions were carried out and supervising staff
were not notified.

-FoodSafe requirements met. FoodSafe Level 1 valid until 2023.
