Observations:
- Walk-in cooler at 3'C
- Preparation coolers and inserts at or below 4'C
- Hot-holding units measured at or above 60'C
- Room temperature potentially hazardous food holding time is 4 hours, after which time the foods are discarded (as stated by staff)
- Temperature logs are maintained
- Thermometers available in cold-holding units
- General sanitation of premise is good during inspection
- Hand washing stations are supplied with hot and cold running water, liquid soap and paper towel
- QUATs sanitizer in pails with wiping cloths measured at 200 ppm QUATs concentration with test strip
- Chemical dishwasher measured at 50 ppm chlorine concentration with test strip
- 3-compartment sink available with drain plugs
- Chlorine and QUATs test strips available on site (and within expiry) - good!
- Equipment stored in a sanitary manner
- Ice machine observed in sanitary condition
- All food stored at least 6 inches off the floor and covered
- First-in-first-out method is in use
