Observation (CORRECTED DURING INSPECTION): Observation: Cooked meat dishes were sitting at 20C on a shelf outside the walk-in cooler. Operator said that they had been there for 45 minutes and were going to be re-heated for customer orders. Potentially hazardous food, must be stored </=4C or >/=60C to prevent the growth of pathogens.
*Correction: Operator was told to place the meat dishes into the walk-in cooler where the temperature was <4C.

Observation (CORRECTED DURING INSPECTION): Observation: Chlorine sanitizer in buckets was at 10ppm. A minimum of 100ppm (max 200ppm) chlorine is required for sanitizing food contact surfaces.
*Correction: Operator discarded the weak chlorine solution and prepared new solution. Concentration was 200ppm. Sanitizer solutions must be replaced every </=3 hours to maintain the required concentation of chlorine.

Observation: Observation #1: Dumpsters outside restaurant had debris on the ground and flies present. Garbage and debris attract pests such as rodents and flies.
*Correction: Clean the debris around the dumpsters and pressure wash the dumpsters more regularly to reduce the fly population.
Observation #2: Dust was accumulating on kitchen ceiling tiles next to ovens / stoves. Dust can fall into food and contaminate it.
*Correction: Clean the ceiling tiles of all dusts. Date To Be Corrected By: June 15, 2018
