Observation (CORRECTED DURING INSPECTION): Bleach present however not in use with wiping cloths for food contact surfaces. Numerous wiping cloths noted on countertops.
Corrective Action(s): Store wiping cloths in bleach santiizer solution to sanitize food contact surfaces.

Observation: -Food present in walk-in cooler which was uncovered.
-Food noted in walk-in cooler covered with newspaper.
-Cooked meat stored in walk-in cooler in colander directly on shelf and adjacent to box of raw pork. This could present cross contamination risk.
Corrective Action(s): -Cover all food items in storage with food grade wrap or tight fitting lids
-Store raw meat away from (underneath) ready to eat foods. Currently, one walk-in cooler has produce and one meat. Recommend transferring ready to eat (cooked meats) to produce cooler.

Observation: -Food debris/dirt noted in corners of floor, along edges of equipment and items on the floor and shelving.
-Accumulation of dust noted on walls
-Food debris/dirt noted on floors and shelving of walk-in coolers
Corrective Action(s): -Pick up all moveable items from the floor and thoroughly clean floor to remove all dirt and debris paying particular attention to corners, along walls and equipment.
-Clean walls to remove dust accumulation
-Thouroughly clean walls, floor and shelving in walk-in cooler to remove all build up.
If surfaces are peeling and no longer washable, repair/refinish surface so that it is maintained in a smooth, washable, impervious condition. Correction date: March 6/18

Comments

-Back sink (by dishwasher) and sink in kitchen supplied with liquid soap and paper towel. *Dishes were noted in back sink beside dishwasher. Use 2-compartment pot sink for dishwashing. Only use this sink for handwashing. Designate one compartment of 2 compartment sink in cooking area as handwashing only.
-Cooler temperatures were acceptable (4C or colder)
-Freezer temperatures were acceptable. Food maintained in a frozen state
-Hot holding of rice was >60C
-Reviewed cooling procedures of soup with Operator as large pot of soup noted cooking at the time of the inspection. Soup must be cooled rapidly from 60C to 21C within 2 hours (max) and from 21C to 4C with 4 hours (max). In order to cool food rapidly, portion soup into smaller containers (shallow metal containers), or use an ice bath or an ice wand.
-High temperature met sanitizing requirements. Final rinse was 71C at dish surface measured with min/max thermometer.
