- Temperature Control: No concerns noted. Monitoring is required to be conducted. Internal temperature monitoring of cooked food items is to be conducted.
- Mechanical Dishwasher: Low Temp: Not tested this date.
- Ensure all food contact surfaces/implements are being washed and disinfected after use or on a timely manner. (ie: 3-4 hours)
- Mechanical Bar Glass washer: Low Temp Chlorine:
- Wiping cloth storage: (Quats)
- Use 200ppm Quats solution and make as per manufacturer's instructions. Change sanitizing solutions in sinks and buckets every couple of hours. Change sanitizing solutions in bottles daily. Use test strips to measure the concentration of sanitizer. Limit the quantity of cloths being used.
- Food Storage: Food/ingredients are to be kept covered, in food grade containers. Utensils/implements not permitted to be stored inside of storage containers.
- Cutting boards: To be upgraded - kept in good repair. No food prep permitted on deteriorating items.
- Sanitary Facilities: Ok.
- Chemical storage: Ok.
- Staff illness/hygiene: Discussed
- Sanitation: Ensure "hard to reach" areas are cleaned on a regular basis. (ie: behind/under equipment, along walls, etc)
- Pest Control: Monitoring is required to be conducted. No signs noted this date.
