Observation: Some areas in the kitchen observed with food accululations (floor) or food splatters (walls). Discussed with operator to update scheduled cleaning practices to include:
- Daily wipe down of walls near high activity food prep areas i.e. Below pass through wall, at rice prep station wall.
- Floor under shelves along wall look pretty dirty when shined with flashligh. Move shelves and clean. Add to weekly or bi-weekly schedule.
Corrective Action(s): Clean as discussed. Move equipment periodically and containers on the floor frequently to ensure cleaning process is complete.
DO NOT USE cardboard as surface to replace cleaning. OK to use in high grease impact areas only if it is changed daily.

Bin freezers below -20 C
Upright freezer at -5 C. Operator aware and adjusting stock rotation practices accordingly. Fish holding times will change (shorten) and quality will suffer. Operator plans to replace unit.
Make sure bleach sanitizer solution at 100 ppm is available in the front and back areas at all times.
Dishwasher at 73 C at plate.

Most areas in the kitchen are clean and well organized.
