The following items have been addressed:
-->Cardboard has been removed from shelves in processing room
-->Operator has purchased extra bins for dry goods
-->Operator won't be installing a handwashing sink by the new preparation area (where staff packages chocolates), so this area is not allowed for food preparation

*Discussed cleaning procedures with operator. Bigger equipment are cleaned in place. Quats sanitizer is used to spray equipment and let air dried after washing and rinsing. Operator indicated equipment such as chocolate melter does not require cleaning regularly (since it's chocolate making only), will confirm with the procedures.
