Observation (CORRECTED DURING INSPECTION): Mechanical mouse trap was placed on top of meat slicer. Staff removed the mouse trap and placed it on floor near freezer and stated that the meat slicer will be cleaned & sanitized.
Corrective Action(s): Do not place mouse trap on top of food contact surfaces as it could lead to potential food contamination. If necessary, speak with your Pest Control Company regarding placement of mouse traps.

Observation: Few mouse droppings were observed in the back area behind stand-up freezer.
Corrective Action(s): Remove the mouse droppings and disinfect the area with 1 part bleach to 9 part water solution. Use proper PPE during cleaning. Discuss the issue with your Pest Control Company to implement control measures.

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation (CORRECTED DURING INSPECTION): Plastic chemical storage bottle was cut out in the shape of scoop and was labelled as "Ice scoop". Chemical storage bottles are not made up of food grade material and not ideal for food handling as chemicals can leach out that could potentially result in chemical contamination of food.
Corrective Action(s): Ensure that equipment made up of food grade material is used during food handling/preparation. Staff discarded the plastic scoop at the time of inspection.

Comments

Routine inspection conducted at the kitchen and the following observations were made during inspection:

- Kitchen was not in operation at the time of inspection.
- Temperature of coolers (x2) was measured at 4C or less.
- Food was stored 6" off the floor.
- Handwash sink had adequate supply of hot and cold running water, liquid soap and single use paper towels.
- Bleach bottle was observed in the chemical storage.
Ensure that 200ppm bleach solution is available as a sanitizer for food contact surfaces during kitchen operation.
- Vents were recently cleaned and no dirt/grease build-up observed.
- Coffee machines/utensils/dishes were maintained in good sanitary condition.
- Pop corn machine was not in use.
- Pest Control Company conducts routine checks.

The following were not checked during inspection:
- Stand-up freezer was locked at the time of inspection. -18C was displayed on the temperature gauge.
- Ice machine was locked.
Ensure that there is no grime/mould build-up inside the machine.
- Pop cooler was locked.
Must be maintained at a temperature of 4C or less.
- High temp mechanical dishwasher was not checked.
Ensure that the temperature reaches 82C on the display gauge during rinse cycle for adequate sanitization of utensils.
- Cupboards were locked and not accessed.
Ensure that cupboards are maintained in sanitary condition and well organized to prevent any risk of contamination.
