Droppings have been removed, areas noted organized, cleaned and appears sanitized. Atlas Pest Control came in the morning -work report indicates 2 rodents caught -operator will be increasing frequency of pest control visits to bi-weekly Food Safety Plans for short ribs and cooked cut potatoes reviewed -workers were NOT following the cooling procedures indicated: Cooling 60 deg C to 20 deg C on wide shallow pans in layer of 1 to 3 inches A Compliance Meeting appointment will be made within 2 weeks for your mandatory attendance
