Observation: The following areas require cleaning and sanitizing: Shelving unit near the dishwashing area and ventilation hood canopy.
Corrective Action(s): Operator stated he may replace this shelving unit with a new one and plans to have the ventilation hood professional cleaned. Clean and sanitize the current shelving unit; Correct within 1 week. If you plan to replace the shelving unit, ensure the next shelving unit is of similar size and is made of easy to clean, smooth, durable, non-toxic, and impermeable to moisture materials. Clean the ventilation hood panels; Correct within 2 weeks. Contact the district Environmental Health Officer for a follow up inspection.

Observation: Potato press with food debris over it was stored on the air drying shelving unit near the 3-compartment sink.
Correction: Operator moved the potato press to the first compartment of the 3-compartment sink for manual warewashing. Disassemble, wash, rinse, sanitize, and air dry the potato press; Correct today and prior to reusing it.
Comments

-Prep. cooler was at 3.5 degrees C (4 degrees C or less). Operator stated they cleaned the empty cooler yesterday and it returned to 4 degrees C or less. Prep. cooler was empty of food at the time of inspection. Check the prep. cooler temperatures throughout each day to make sure it is kept at or below 4 degrees C.
-Sweets cooler was at or below 4 degrees C.
-Several new digital thermometers were available on-site.
-An IR thermometer was also available on-site.
-Cleaning improvements were made to the floor, stainless steel wall paneling, sides of the cooking equipment, and knobs of the handsink near the dishwashing area.
-Potato press was in a clean condition.
