-General sanitation of area is satisfactory -Handsink supplied with liquid soap and paper towel -Display cooler was 3C -Under counter cooler was at 2C -Quats sanitizer (200ppm) present in a spray bottle and from dispenser at 3 compartment sink. -pH of sushi rice was 4. Test strips present to monitor pH. -Records were up to date. -No signs of pest activity noted.
