Observation (CORRECTED DURING INSPECTION): Equipment/utensils/food contact surfaces not properly washed and sanitized.
Observation; 3 sanitizer pails (2 buckets and 1 counter sanitizer container) measured 50ppm QUATS at the time of inspection.
Correction: Operator re-filled the sanitizer pails with 200ppm QUATS solution. Ensure test strips are used to check the concentration of the sanitizer and the pails are re-filled every half-hour or when the concentration drops below 200ppm.
Rationale: Adequate sanitizer levels ensures proper sanitation of the food contact surfaces which prevents cross contamination and foodborne illness.

All handwashing sinks adequately equipped with hot/cold running water, liquid soap, and disposable paper towels.
Ice machine in good sanitary condition. Scoop stored outside in a sanitary container. Water tray in good condition - no debris or mould noted.
High temperature dishwasher achieved 81C at dish surface after the final rinse cycle.
Washroom in good sanitary condition. Sink adequately equipped.

Storage
Food stored at least 6" off the floor.
Stainless steel racks used for dry storage.
All products in storage are labelled and have dates for use by.
Items are covered/packaged inside the cooler.
Randomly selected items were within their best before dates at the time of inspection.

Pest control
No signs of recent pest activity noted.
Facility is monitored by a professional pest control company on a monthly basis.
