Observation: Dishwasher operated a few times prior to temperture checking: 59C at plate level (over 180F at gauge), then 62.3C at plate level (190F at guage). Operator stated that the technician will service the dishwasher today.
Corrective Action(s): In the meantime, perform the sanitize step of dishwashing in the 3 compartment sink (immediately).
Repair the dishwasher/gauge so that the rinse cycle achieves at least 71.2C at plate level and 180F at gauge.
Contact district EHO when repairs are completed.

Items corrected since last inspection VIPP-B9KQ4J:
- Internal temperatures of foods at the hot holding cabinet were above 60C. Operator explained that a revised cooking method is implemented to ensure foods are adequately cooked and thus can be maintained at safe hot holding temperatures.
