Comments

Food Handler Hygiene
o Hand wash stations are fully supplied with liquid soap and paper towels in dispensers
o Hand washing was observed during the inspection
o Gloves were used appropriately
o Operators had clean clothing for food preparation

Storage Temperatures
o Cold holding Coolers are below 4C
Line Coolers - Operators are reminded to keep lids down when not busy or not in use to maintain temperatures below 4C.
o Cold holding Freezers are below -18C
o Hot holding food items are at 60C (70C)

Food Processing and Food Protection
o Food Storage - Food is stored in covered containers
-Small cooler bottom (across from line cooler): ice build up on condenser panel. Ice is melting and dripping.
Monitor this and ensure drips are cleaned up promptly; ensure no drips get onto food.
-Meats are stored on the lowest shelf
-Coolers are organized to prevent cross contamination

Maintenance and Sanitation
o 3 Compartment sink dishwashing > 200ppm Quat sanitizer (400ppm Quats measured)
o Chemical dispensers - 200ppm Quat sanitizer dispensed from tube in wall
o Sanitizer bottles/buckets were refilled with 200ppm Quats during the inspection. Cloths were dry and buckets were dry.
Ensure these are changed frequently and used as needed and as per your food safety plan/ cleaning plan.
o Storage of chemicals is separate and away from food
o Condition of equipment and surfaces - food contact surfaces and equipment are in good repair and clean condition
o Pest control - Operators have a pest control contractor in place and there are no signs of pests at the time of inspection.
o Sanitation Plan - Operators have a sanitation plan in place
