Cloth rags no longer used to cover food items.

Dishware cart next to meat slicer - a metal splash guard has been installed to protect clean dishware from food debris.

Rags observed stored in containers of sanitizer solution.

Knives and knife rack observed in a sanitary condition. Ensure knives are cleaned and sanitized after use.

Cleaning within walk-in cooler and along cooking line has been conducted. Ensure frequent cleaning is conducted in these locations to maintain current level of sanitation.

Cardboard and plastic sheets have been removed from all cooler unit shelving to allow for proper air circulation within units.

Service technician adjusted sanitizer feeder for glasswasher, 25 ppm Iodine detected during dishwasher cycle.
