- Deli section and equipment maintained in a sanitary condition
- Handsinks (raw chicken prep area, cooking area, prep area) supplied with hot and cold running water liquid soap and paper towel.
- Manager explained measures in place to prevent cross contamination between raw and cooked product.
- Blue coats worn while handling raw poultry/meat product, white coats worn for cooked/ready to eat product.
- Walk-in cooler (shared with meat dept) was 0-1C
- Deli display cooler 3C
- Rotisserie chicken in hot holding display was 64-67C
- Observed staff measuring internal temperature of chicken to verify cooking temperature. Temperature recorded in log.
- Quats sanitizer solution present in all three areas for sanitizing surfaces. Quats solution measured 200ppm in all buckets and in warewashing sink.
- Ambient temperature of prep room was 10C
- Ambient temperature of raw chicken prep room 9C
- No pest activity noted
- Managers have completed Foodwise course (Foodsafe level 1 equivalent)
