Observation: Internal temperature of pizza toppings( pepperoni, cheese) in top inserts of the preparation cooler ranged from 10-11 degrees.
All meat items were transferred to the bottom of the cooler.
Corrective Action(s): Repair or adjust the cooler so that it is capable of maintaining all food items at 4 C or below at all times.( Immediately)

Comments

Follow up items from the previous routine inspection:
Walls behind the dishwasher, pizza oven, pizza pan rack and behind the deep freezer have been refinished with Stainless steel panels and/or FRP panels.
Above areas are now more cleanable. Good.
Significant reduction noticed in the number of mice droppings behind and underneath equipment.
No signs of mice noticed in the dry storage room.
-Entire restaurant floor has been pressure washed including degreasing cooking equipment and gas lines. Good.
Back door is now kept closed.


You must continuously keep monitoring for evidence of mice ( droppings) every day. Ensure that areas underneath and behind equipment
including dishwashing sinks and dishwasher are cleaned EVERY DAY.


However, the following items still need addressing.
-Move the beer cooler, small bar cooler, coffee counter and other items from underneath the bar counter and clean the floor
followed by sanitizing.
-Refinish the floor so that there is no gap between slabs and corners are sealed
-Remove any old wooden boards from underneath equipment and install tiles so the floor has no gaps.and is easy to clean. ( By Dec. 18, 2019).
-Clean some shelves in walk-in cooler and fan covers to remove dust.
-Remove wooden kick plates from underneath the equipment as this provide ideal rodent harborage.
-Do not store glue traps in food storage cabinet. Must be stored in a designated area away from food items.
