Met with owner / operator Toresa Hobbs and we discussed the following:
Cleaning schedules (are missing in our file). Owner will be emailing me a copy of the cleaning schedules.
Daily temperature logs, please include the hot holding recordings and daily chemical logs as part of your daily maintenance. (chicken hot holding).
FoodSafe training at least one food handler per shift will have required training.
Pest control - Canadian pest control is present.
Owner submitted the following:
-copy of the legal documents
-permit fee (will be paid in our office today for Nov to March 2017 $62.50)
-FoodSafety plan , trans fats information (pl provide documentation by Dec. 5)

Diversely Calle is a chemical supplier, quat used as approved sanitizer and the test strips are provided.
All hand wash stations are supplied with disposable paper towels and liquid soaps.
Mop sink installed enclosed and supplied with mechanical dispensing system
High temp dishwasher reached 185 F at the final rinse cycle.
Construction has been completed as per approved floor plan. Permit to operate has been issued.
