All fridges iincluding prep fridge are maintaining foods at 4 degrees C. or colder. Freezer is -21 degrees C. General sanitation is overall good. Liquid soap and paper towel at handsink. Quat sanitizer in spray bottle measured 200 PPM residual. Walk in cooler very well organized.
