209 - Food not protected from contamination [s. 12(a)]
Observation: No covers on some of the items in the dry storage and utensil's business end touching food product (i.e. spoon sitting on top of the mashed potato). Also, personal items such as keys was still found on the shelf in the kitchen.
Corrective Action(s): Ensure all items are covered and protected at all times. Use proper utensils with business ends away from food items. Keep all personal items (e.g. keys, cell phones, etc.) to be stored away from food preparation areas. Note: Organize shelving areas where food and food equipment are stored to reduce potential cross contamination.

304 - Premises not free of pests [s. 26(a)]
Observation: New droppings noted on the glue board in the back dry storage area and on an opened bagged of flour.
Corrective Action(s): Discarded the bagged of flour. It is critical that a new pest control contract be in place (currently pest control monitoring is not working) by the end of this week (January 18, 2019).

Observation: Cleaning improvements have been made.
Corrective Action(s): More cleaning still to be done such food equipment, under tables, shelves edges, cooking line and filters and some floor areas, ceiling and walls.

Comments

Rotational cleaning to be done to ensure all areas are properly cleaned and sanitized on a regular basis.
Include monitoring records for these tasks.
Ensure all kitchen staff have valid Food Safe 1 certification.
Continue with the cleaning for follow up on January 18, 2019.
Provide a copy of pest control contract by Friday (Jan. 18, 2019).
