Discussed with manager Dave regarding the cloth towel dispensers at the handsinks. As discussed, current health standards require single use hand drying, ie. single use paper towels. As discussed on the previous report, when staff are using the cloth towels and pulling them down after, there is no way to monitor whether the staff have adequately pulled down the cloth towel, or whether bacteria has spread to a "clean" part of the cloth towel which could then contaminate another staff member's hands. Having single use paper towels eliminates the risk/possibility of staff incorrectly using the cloth towel dispenser. As this cloth towel dispenser has been in place since the restaurant has opened, time will be alotted for a switch to single use paper towel dispensers. Manager said he will be contacting his cloth towel servicing company for information on paper towel dispensers. Follow up to be conducted.

Prep cooler door is on order to be serviced.
Please send copy of Certificate of Incorporation to prove that legal ownership is still the same as what is on file. Currently, the listed person in charge no longer works at this facility. If legal ownership is still the same, the person in charge will be changed to reflect the current operator. If legal ownership has changed, then a completely new application will need to be filled out.
