Observation (CORRECTED DURING INSPECTION): 1. Observed bleach sanitizer to be at >>>>200ppm in the sanitizer bottle
2. Observed wiping cloths for cleaning food contact surfaces to be on prep table and being re-used to clean and/or to wash hands
2. Observed manual dishwashing sink with no sanitizing solution
Corrective Action(s): Required operator to:
1. reduce the concentration of chlorine to be at 100-200ppm in the spray bottle
2. have a bucket of sanitizer at all times to ensure that wiping cloths are stored in the sanitizing solution when not in use
3. have a manual dishwashing sink filled with sanitizing solution to for dishwashing at all times

Observation (CORRECTED DURING INSPECTION): 1. Observed food items in the kitchen and in walk-in cooler without proper lids and stacked on top of another food item directly. this must discontinue
2. Observed a broom and garbage can stored directly beside dry storage area where no proper lids were in place to protect food from contamination
Corrective Action(s): Required operator to have proper lids/covers to protect food from contamination at all times; required operator to store cleaning tools separately, away from food to eliminate possible contamination of food.

Observation: 1. under deep fryer, gril and oven with food and grease build-up
2. under shelvings where condiments and dishes are required cleaning
3. under shelvings in dry storage area required cleaning
