Comments

Main kitchen:
- General sanitation good.
- All handwashing stations (kitchen, serving) supplied with hot/cold running water, soap, paper towels.
- Low temperature dishwasher dispensed 100ppm chlorine bleach concentration.
- Surface sanitizer available in spray bottles/designated buckets at 200ppm QUAT concentration. Test strips available for testing.
- Dry storage area has adequate space and wire racks.
- No signs of pest activity at the time of the inspection. Monthly pest control inspections done through third party pest control company. June 2022 report reviewed at the time of the inspection.
- FOODSAFE trained staff on duty. Verified at the time of the inspection.

Temperature control:
- All coolers (prep, undercounter, meat/seafood cabinets) at < or = 4C
- Walk in cooler = 0C. Please monitor the cooler and ensure that the door is kept closed at all times.
- Walk in freezer = -22C
- All hot holding units > or = 60C
- Walk in beverage cooler 0C
- Thermometers available.
- Daily temperature log available and digitally logged.

Bar:
- Two handwashing stations supplied with hot/cold running water, soap, paper towels. The faucet/handle unit is loose. Ensure to secure the unit to the sink.
- Two reach-in coolers at < or = 4C.
- Glasswasher (bar) dispensed 12.5ppm iodine concentration.
