Sanitize a minimum of 4 hour intervals. Corrective Action(s): Violation Score: 5 302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)] Observation: High temp dishwasher is not reaching a sanitizing temperature. (66 Celsius max at plate level) Consult a dishwasher technician to repair or otherwise solve the problem. Note that dishwasher booster heaters are designed to increase water temperature by about 20 Celsius; if incoming water temperature is far below 60 Celsius then this might be the underlying issue. Premise is quite clean and organized. NO sign of pests. Fridges are all under 4 Celsius. Hand sink is stocked and working.
