Service dishwasher. In the meantime operator is washing dishes in the 2 compartment sink. Wash then sanitize (over 100ppm cl) then airdry

Hot holding over 60C

Coolers less than 4C/-18C. One cooler no longer in operation being used to store avocados only

Bleach solution available for sanitizing cutting boards at sushi prep table (over 100ppm cl residual). Obtain a second spray bottle for wiping counters etc.

Floor repaired in kitchen area as required on previous report.
