A routine inspection was conducted, the following observations were made:
- Coolers were 4C or colder; freezers were -18C or colder; hot holding units above 60C; thermometers present; and temperatures recorded daily.
- [Cl2] in sanitizer buckets and dishwashing sink was between 100-200ppm.
- Foods stored correctly. Food stored in food grade containers; covered; labeled; date coded; in groups to prevent cross contamination; raw proteins separate from RTE foods; and 6" off the floor on shelves or platforms.
- Food handling practices done correctly. Utensils used, and hands washed frequently.
- No expired foods in use. FIFO rules being followed.
- Sanitation level is good. No signs of pests.
- FoodSafe certified staff present.
- All equipment in working order.
- All in order. Keep up the good work.
