Observation (CORRECTED DURING INSPECTION): Observed a white cutting board sitting on top of a cooler below sandwich prep table. top surface of the cooler was not clean at the time of inspection
Corrective Action(s): Required operator to find a different location storing cutting boards (drying rack, clean/sanitized dish/utensil shelves, etc). Required operator to clean and sanitize the cutting board before use

Observation (CORRECTED DURING INSPECTION): Observed staff using wiping cloth to clean the food contact surfaces just with water. educated operator that sanitizer must be used to clean food contact surfaces
Corrective Action(s): Required operator to use a clean (and sanitized) wiping cloth, apply sanitizer, then wipe. cloths should be washed and rinsed or new sets must be used.

-low temperature dishwasher in good working order; detected 50 ppm of chlorine with test strip
-chlorine sanitizer bottle on site and in use; detected 100ppm of chlorine with test strip
-no sign of pests noted at the time of inspection
