Observation (CORRECTED DURING INSPECTION): Small portions of paneer and cut vegetables in small trays were again, stored out on counter at room temperature.
Corrective Action(s): Repeat violation. Paneer meausred to be at 17C was discarded at time of inspection. As discussed during last inspection, these trays MUST BE STORED ON ICE and used up every 2 hours. Any items not used within 2 hours must be discarded. Operator moved all vegetables to upright cooler at time of inspection and prepared large containers of ice.

**If cut/prepped vegetables and paneer are not properly held on ice in the future, further enforcement actions will be taken and installation of a prep cooler may be required.

Comments

- Bleach sanitizer solution in bucket for storing wiping cloth was measured to have 200 ppm chlorine - good. Reminder that solution in bucket must be changed every 4 hours or sooner if visibly dirty.
- Bleach sanitizer solution also available in spray bottle. Ensure to mix 1 tsp of bleach with 1 litre of water for proper concentrations, and change solution every week.
- Individually portioned sauces for take-out orders were stored in walk-in cooler at time of inspection. Good.
