Observation (CORRECTED DURING INSPECTION): Sanitizer was not readily available for use at the time of the inspection. Operator did prepare a 200ppm chlorine solution during the inspection.
Corrective Action(s): Always have sanitizer solution prepared and use that for storing wiping cloths. As discussed, get a spray bottle and label it as "sanitizer". Use 1/2 tsp bleach and fill the rest of the bottle with water. Use this sanitizer solution for cleaning all food contact surfaces.

Observation: Some foods were stored directly on the floor of the walk-in cooler; some foods were not covered inside coolers.
Corrective Action(s): Do not store foods directly on the floor (must be at least 6" off the floor). Cover all foods in the coolers.

Observation: Some minor cleaning required. Exhaust hood does not have a servicing date.
Corrective Action(s): Clean the cooler doors and handles. Remove and discard the cardboard lining the kitchen floor at the end of the night. Ensure that the exhaust hood gets serviced every 4 months. There should be a service date sticker on the hood.

Handsinks are fully equipped. CHANGE THE PAPER TOWEL DISPENSERS SO THAT PAPER CAN BE DISPENSER MORE EASILY AND WITHOUT HAVING TO TOUCH THE SIDE.
Dishwasher rinse was 72 degC at plate level
