Observation: Chicken hot display case is maintaining food temperature at 40C.
Corrective Action(s): All product was discarded at the time of inspection. Temperature must be turned up enough to keep hot foot at 60C or hotter. An accurate thermometer must be provided to measure temperature.

Observation: Chicken breading area is not being kept in a sanitation condition.
Corrective Action(s): Please provides sanitation plan for chicken coating and cooking area. At time of inspection, chicken breading station still had water sitting in it from today's operation, even though all cooking staff have gone home for the day and no more cooking is planned for today. Every day you must empty out water and clean & sanitize containers and breading station.

Observation: Cleaning needs improvement. Handles and surfaces are greasy and sticky.

Potato wedger has not been cleaned thoroughly. Cleaning has improved from last inspection, but food debris is still stuck in top side of wedger.
