Observation (CORRECTED DURING INSPECTION): White cheese and Cheddar cheese measured to be at 11.0C and 10.2C respectively. Operator reports they have been in the prep cooler since last night.
Corrective Action(s): Operator discarded both tubs of cheese. Only fill in small amount of cheese in the prep cooler so that it is able to be used up in 2 hours until the prep cooler has been repaired or replaced.

2) 1/3 of the prep cooler unable to keep 4C or lower (most left unit).
3) Front hand washing sink unable to produce hot water (only able to produce 25C).
Corrective Action(s): 1) Repair or replace freezer so that it does not leak
2) DO NOT USE the left 1/3 part of the prep cooler until it has been repaired or replaced so that it is able to provide 4C or lower at all times
3) Use back hand washing sink to wash hands until there is hot water in the front hand washing sink.
