302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Dishware, utensils, and other equipment are being improperly washed and sanitized because the dishwasher is unable to dispense sanitizer and is not supplied with detergent. In addition, no sanitizer was prepared.
Corrective Action(s): Manual dishwashing is temporarily permitted. Clean and sanitize the two compartment sink and a large container. Fill up the large container with 100 ppm bleach sanitizer (1/2 teaspoon unscented household bleach per 1L clean water).
1. Wash all equipment with detergent in the first sink
2. Rinse all equipment with clean water in the second sink
3. Submerge all equipment in the bleach sanitizer for 2 minutes
4. Allow equipment to air dry before using
Manual dishwashing sign (Chinese) and chlorine test strips provided to operators. Test the bleach sanitizer every 2 hours using test strips. Prepare fresh bleach sanitizer if the concentration drops below 100 ppm. Ensure bleach sanitizer is also available at all times for sanitizing surfaces during operation.

Observation: 1. Handles of bulk food scoops were in direct contact with bulk food.
2. Many containers of food in the coolers and freezers were not covered.
3. Rice scoop was stored in room temperature water.
Corrective Action(s): 1. Clean and sanitize these scoops. Store them in a clean dedicated container.
2. Cover all containers of food to avoid potential contamination.
3. Clean and sanitize this rice scoop. Discard old water and replace with ice water. Ensure used rice scoops are stored in ice water at all times. Alternatively, wash rice scoops after each use. Operator will wash the rice scoops after each use.
