Observation: 1) A tray of cooked chicken strips were stored uncovered in the prep cooler close to the handwashing station by the kitchen entrance.

2)A box of dry rice was not covered on the dty storage shelves (bottom shelf)

Corrective action: Always cover food stored in the refrigerator and on dry storage shelves to prevent contamination.

Observation: Flies observed flying around the back kitchen door. Fly sticky traps at the back door were having some fly bodies stuck on the traps.
Corrective action: Replace fly sticky traps at a frequent interval to ensure fly population is kept at minimum on premise. Presence of flies can result in food contamination.

Observation: At the time of the inspeciton, operator/manager did not have Foodsafe Level One certificate or equivalent.

Corrective action: Informed manager to take Foodsafe Level One Certificate course. Foodsafe Level One certificate ensures proper food handling practices can be achieved on premise at all time.

General comments:
-Handwashing station is equipped with hot/cold running water, proper towel (single-use), and liquid soap.
-Walk-in cooler at 3.9C
-Prep cooler by dishwashing area at 1.0C
-Two front prep coolers (facing customers) were at 2.1C And 1.9C.
-Front drink display cooler at 3.2C
-Freezer at -7.3C
-All coolers are clean, organized.
-All food stored above floor.
-QUATS spray bottle at 200ppm QUATS concentration.
-QUATS dispenser by the three-compartment sink was at 200ppm QUATS
-High temperature dishwasher achieved a temperature of 70.9C at plate level after final rinse.
-All hot-holding units are above 60.0C
-Kitchen hood is clean.
NOTE: Inspection for cleaning expired on July 7, 2018
-Staff washroom is equipped with hot/cold running water, liquid soap, and single-use paper towel.
-Valid operating permit posted on the wasll by the kitchen entrance.
