Observation (CORRECTED DURING INSPECTION): 1.Reviewed manual dishwashing procedure - operator walked through procedure without including plugging the sinks and fully using the approved 3 comp sink manual dishwashing method.
2.Front sanitizer bottle noted with 50 ppm QUATS
Corrective Action(s): 1)Ensure the proper dishwashing method is being used with the 3 comp sink.
1.Fill 1 comp with detergent water for WASHING
2.Fill the next sink with water or use dishwashing wand for RINSING
3.Fill the last sink comp with sanitizer solution 200 ppm QUATS and soak clean dishes for at least 2 minutes in solution
4.AIR DRY on drying racks
2)Ensure all sanitizer bottles are refilled daily with 200 ppm QUATS. Overtime chemicals break down or evaporate and sanitizer bottle must be replenished with fresh solution.
