It is important to move the equipment to perform proper and complete cleaning. **A couple of the shelves in the kitchen are not designed for food storage in kitchen environments. They have many difficult to access crevaces or grooves that make routine cleaning difficult. Cardboard is not the answer or substitute to cleaning and should be removed. Corrective Action(s): Make sure to move equipment or storage shelves more often to promote good sanitation practices. Clean identified areas as discussed. Violation Score: 9

Cooling units less than 4 C. Freezers around -16 to -20 C. hot holding above 60 C. Handsinks stocked with paper towels and liquid soap. Kitchen handsink free and accessible for washing hands. Operator noted he purchased a couple of stainless steel tops to counters for easier more effective cleaning. **Work towards replacing the plastic grooved shelves in kitchen area as they are difficult to clean. Dishwasher at 71 C at plate. sanitizer spray bottle at 200 ppm.
